和食ー일본 정식

일본 요리(日本料理)라 함은 좁은 의미로는, 일본 고유의 요리법을 사용한 일본 고유의 요리들을 지칭한다. 일본인이 오랫동안 먹어온 식사이더라도, 그것이 일본의 독특한 요리가 아니라면, "일식"(日食)/화식(和食)이라고 불리지 않는다。和食-와쇼쿠는 2011년 11월 무형문화재로 등록.유네스코 추천으로 12월 심사, 추천 등록되었다. 와쇼쿠 라고 하면 일본 요리다.



Japanese cuisine has developed through centuries of social and economic changes, and encompasses the regional and traditional foods of Japan. The traditional cuisine of Japan (和食 washoku) is based on rice with miso soup and other dishes, with an emphasis on seasonal ingredients. Side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Fish is common, often grilled, but also served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter as tempura.Apart from rice, staples include noodles, such as soba and udon. Japan has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga. Foreign food, in particular Chinese food in the form of noodles in soup called ramen and fried dumplings, gyoza, and western food such as curry and hamburger steaks are commonly found in Japan. Historically, the Japanese shunned meat, but with the modernization of Japan in the 1880s, meat-based dishes such as tonkatsu became common. Japan has an indigenous form of sweets called wagashi include ingredients such as red bean paste as well as indegenous rice wine or sake. Japanese cuisine, particularly sushi, has now become popular throughout the world. As of 2011, Japan overtook France in number of Michelin starred restaurants and has maintained the title since.


日本料理(にほんりょうり・にっぽんりょうり)は、日本でなじみの深い食品を用い、日本の国土、風土の中で発達した伝統的な料理をいう。日本食とも呼ばれ、日本風の食事を和食と呼ぶ。食品そのものの味を利用し、旬を大切にする特徴がある。広義には日本に由来して日常作り食べている食事を含むが、狭義には精進料理や懐石などの一定の形式をふまえたものや、御節料理や彼岸のぼたもち、花見や月見における団子、冬至のカボチャなど伝統的な行事によるものである。2013年11月、「和食」の無形文化遺産への登録が、ユネスコの事前審査で勧告され、同年12月に登録された。


일본의 요리는 전부에 상에 올리고 늘리지 않는다.

焼き鳥。カキフライ。魚のグリル、茶碗蒸しなど多様である.
